Let's Get Dippin'!

What's your plan for the weekend? Cause me, I'm going to make it easy and light. Just a quick out-going moment and a huge splash of comfort with a brilliant book on my lap, some good and remarkable music echoing in the background, an old, but absolutely compelling movie waving in front of me, and  lot of great dipping in between.

Sounds perfect to me! What do you think?

Avocado Blue Cheese Dip

Avocado and Blue Cheese Dip

1 medium size avocado
2 Tbsp chopped onion
1/2 Tbsp freshly squeezed lemon juice
1/4 cup (60 g) sour cream
1/4 cup / 1.2 oz (35 g) blue cheese, crumbled
1/2 tsp salt
1/4 tsp black pepper

Peal and core the avocado and cut it into small chunks. Place the chunks into the food processor together with onion and lemon juice. Puree until smooth.
Add the sour cream, blue cheese, salt and pepper. Blend until well combined and smooth. Then you should taste and add some salt, pepper or lemon juice if necessary.
Chill in the refrigerator at least for an hour before serving.

This dip goes amazingly well with all types of crackers, but it is better used within a day or two, cause latter on it stars darkening and looses it appeal.
